Ingredients
- 1 lb spaghetti or pasta of choice
- 2 pints (about 4 cups) cherry or grape tomatoes
- 4–5 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil leaves, roughly chopped
- Salt and freshly ground black pepper to taste
- 1/2 cup reserved pasta water (more as needed)
- Optional: Red pepper flakes, grated Parmesan cheese for serving
Instructions
- Prep Ingredients: Wash tomatoes and mince garlic. Roughly chop fresh basil. Cook spaghetti according to package directions, reserving 1/2 cup pasta water before draining.
- Sauté Aromatics: In a large skillet or pot, heat olive oil over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant and lightly golden.
- Cook Tomatoes: Add cherry tomatoes to the skillet, season with salt and pepper. Cover and cook for 10-15 minutes, stirring occasionally, until tomatoes burst and form a sauce. Gently mash some for a smoother texture.
- Combine & Finish: Add cooked spaghetti and most of the fresh basil to the sauce. Toss to coat, gradually adding reserved pasta water until the sauce clings to the pasta.
- Season & Serve: Taste and adjust seasoning. Serve immediately, garnished with remaining basil and grated Parmesan cheese.
