Ingredients
- 1 lb (about 450g) cherry or grape tomatoes
- 3 tbsp extra virgin olive oil
- 4–5 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional)
- 1/2 cup fresh basil leaves, torn or roughly chopped
- Salt and freshly ground black pepper, to taste
- 12 oz (about 340g) spaghetti or your favorite pasta
- Freshly grated Parmesan or Pecorino Romano cheese, for serving
Instructions
- Prepare Tomatoes and Garlic: Wash cherry tomatoes. Mince garlic.
- Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes; sauté 30-60 seconds until fragrant.
- Burst the Tomatoes: Add tomatoes, salt, and pepper. Cover and cook 8-10 minutes, stirring and pressing to burst.
- Simmer and Season: Uncover, add most basil. Simmer 5-7 minutes. Taste and adjust seasoning.
- Toss with Pasta: Cook spaghetti al dente. Reserve 1 cup pasta water. Add drained pasta to sauce, toss, adding reserved water if needed.
- Garnish and Serve: Serve hot with remaining basil and freshly grated cheese.
