Ingredients
- 2 tablespoons extra virgin olive oil
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 2 pints (about 4 cups) cherry or grape tomatoes, halved if large
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- Pinch of sugar (optional, to balance acidity)
- 1/4 cup fresh basil, chopped, plus more for garnish
Instructions
- 1. Prep Ingredients: Wash tomatoes; halve if large. Mince garlic and dice onion. Chop basil, reserving some for garnish.
- 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add onion and cook until translucent (3-5 minutes). Add garlic and cook for 1 minute until fragrant.
- 3. Simmer Tomatoes: Add cherry tomatoes, salt, pepper, and sugar (if using) to the skillet. Increase heat to medium-high, bring to a simmer, then reduce to medium-low. Cover and cook for 15-20 minutes, stirring occasionally, until tomatoes burst and form a sauce. Gently smash some tomatoes.
- 4. Finish and Serve: Remove from heat. Stir in chopped basil. Taste and adjust seasoning. Toss with cooked spaghetti and serve immediately, garnished with fresh basil and Parmesan cheese.
