  • 2 pints (about 4 cups) cherry or grape tomatoes, halved if large

  • 1/4 teaspoon black pepper, or to taste
  • Pinch of sugar (optional, to balance acidity)
  • 1/4 cup fresh basil, chopped, plus more for garnish

Instructions

  • 1. Prep Ingredients: Wash tomatoes; halve if large. Mince garlic and dice onion. Chop basil, reserving some for garnish.
  • 2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add onion and cook until translucent (3-5 minutes). Add garlic and cook for 1 minute until fragrant.
  • 3. Simmer Tomatoes: Add cherry tomatoes, salt, pepper, and sugar (if using) to the skillet. Increase heat to medium-high, bring to a simmer, then reduce to medium-low. Cover and cook for 15-20 minutes, stirring occasionally, until tomatoes burst and form a sauce. Gently smash some tomatoes.
