Description
A vibrant and fresh cherry tomato spaghetti sauce that comes together in under 30 minutes. Bursting with sweet tomato flavor and fresh basil, it’s perfect for a quick and delicious weeknight meal.
Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes
- 4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil leaves, roughly chopped or torn
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- Optional: 1/4 teaspoon red pepper flakes
Instructions
- 1. Prep Ingredients: Wash tomatoes. Mince garlic. Chop basil.
- 2. Sauté Garlic: Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes (if using) and sauté for 30-60 seconds until fragrant and lightly golden. Be careful not to burn.
- 3. Cook Tomatoes: Add cherry tomatoes to the skillet. Season with salt and pepper. Increase heat to medium-high and cook, stirring occasionally, for 8-12 minutes, until most tomatoes have burst and released their juices.
- 4. Mash Tomatoes: Use the back of a spoon or a potato masher to mash any remaining whole tomatoes to your desired consistency. Continue cooking for another 5-7 minutes as the sauce thickens slightly.
- 5. Finish and Serve: Remove from heat. Stir in the fresh basil. Taste and adjust seasoning as needed. Toss with your favorite cooked pasta and serve immediately.
