Ingredients

  • 2 lbs (about 4 cups) cherry or grape tomatoes
  • 68 cloves garlic, peeled
  • 1/4 cup extra virgin olive oil, plus more for garnish
  • 1/21 teaspoon red pepper flakes (optional, to taste)
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon freshly ground black pepper, plus more to taste
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup water or vegetable broth (optional, for consistency)
  • Cooked pasta, for serving
  • Freshly grated Parmesan cheese, for serving

Instructions

  • Preheat Oven & Prep Tomatoes: Preheat oven to 400°F (200°C). On a large baking sheet, spread cherry tomatoes and peeled garlic cloves in a single layer. Drizzle with olive oil, red pepper flakes (if using), salt, and black pepper. Toss to coat.
  • Roast for Flavor: Roast for 25-30 minutes, or until tomatoes have burst, softened, and are slightly caramelized, and garlic is tender.
  • Simmer Sauce: Transfer roasted tomatoes and garlic (with pan juices) to a medium saucepan. Bring to a gentle simmer over medium-low heat. If too thick, add a splash of water or broth. Simmer for 10-15 minutes to meld flavors.
  • Mash & Season: Use the back of a spoon or potato masher to gently crush tomatoes, leaving some texture. Taste and adjust seasoning with more salt and pepper as needed.
  • Finish with Basil: Remove from heat and stir in fresh chopped basil. Serve immediately over cooked pasta with grated Parmesan cheese.
