This easy, vibrant cherry tomato spaghetti sauce comes together quickly with minimal effort, bursting with sweet, tangy flavors. Perfect for weeknight dinners, it’s a versatile sauce that shines with fresh ingredients.
Ingredients
- 2 pints (about 4 cups) cherry or grape tomatoes
- 1/4 cup extra virgin olive oil
- 4–6 cloves garlic, thinly sliced
- 1/2 teaspoon sea salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup fresh basil, roughly chopped (divided)
- 1/4 cup fresh oregano, roughly chopped (divided)
- Optional: 1/4 teaspoon sugar or 1 teaspoon balsamic glaze
Instructions
- Preheat oven: Preheat your oven to 400°F (200°C).
- Prep tomatoes: On a large baking sheet, spread cherry tomatoes, olive oil, sliced garlic, salt, pepper, and red pepper flakes (if using). Toss to coat.
- Roast tomatoes: Roast for 20-25 minutes, until tomatoes are blistered and some have burst.
- Simmer sauce: Transfer roasted tomatoes and juices to a large skillet. Add half of the fresh basil and oregano. Simmer over medium heat for 5-7 minutes.
- Smash tomatoes: Gently smash about 2/3 of the tomatoes with a spoon or potato masher to create a rustic sauce.
- Finish & serve: Remove from heat, stir in remaining fresh basil and oregano. Taste and adjust seasonings. Serve immediately over pasta.
