Ingredients
- 1.5 lbs cherry or grape tomatoes, halved
- 4 cloves garlic, thinly sliced or minced
- 1/2 small yellow onion, finely diced (optional)
- 1/4 cup extra virgin olive oil, plus more for finishing
- 1/2 cup fresh basil leaves, roughly chopped
- 1/2 teaspoon red pepper flakes (optional, or more to taste)
- Salt and freshly ground black pepper, to taste
- Optional: 1 tbsp dry white wine or balsamic vinegar
Instructions
- Prep all ingredients: halve tomatoes, dice onion, slice garlic, chop basil.
- Heat olive oil in a large skillet over medium heat. Sauté onion until translucent (3-5 mins), then add garlic and red pepper flakes, cooking until fragrant (1 min).
- Add halved cherry tomatoes to the skillet. Season with salt and pepper. Increase heat to medium-high and cook, stirring occasionally, until tomatoes burst (8-12 mins). Gently press some with a spoon.
- Reduce heat to low and simmer for 5-10 minutes for flavors to meld. If using, add wine or vinegar and cook for 1-2 minutes.
- Remove from heat, stir in fresh basil. Taste and adjust seasoning before serving immediately over pasta.
