Ingredients
- 2 pints cherry or grape tomatoes
- 4–6 cloves garlic, peeled
- 1/4 cup extra virgin olive oil, plus more for drizzling
- 1/2 cup fresh basil leaves, roughly chopped
- Salt and freshly ground black pepper to taste
- Optional: 1/2 tsp red pepper flakes
- Optional: 1 small onion or 2 shallots, finely diced
Instructions
- Preheat oven to 400°F (200°C).
- Spread cherry tomatoes and garlic on a baking sheet. Drizzle with 1/4 cup olive oil, season with salt and pepper.
- Roast for 25-35 minutes, until tomatoes burst and garlic is golden.
- (Optional: Sauté diced onion/shallots in a large skillet with a tablespoon of olive oil over medium heat until translucent.)
- Transfer roasted tomatoes, garlic, and juices to the skillet.
- Gently crush some tomatoes with a spoon. Add red pepper flakes if desired.
- Simmer for 10-15 minutes, allowing flavors to meld.
- Blend to desired consistency using an immersion blender or by mashing.
- Stir in fresh basil. Taste and adjust seasoning with salt, pepper, or a pinch of sugar.
- Serve hot over spaghetti or your favorite pasta.
