Ingredients

  • 2 pints cherry or grape tomatoes
  • 46 cloves garlic, peeled
  • 1/4 cup extra virgin olive oil, plus more for drizzling
  • 1/2 cup fresh basil leaves, roughly chopped
  • Salt and freshly ground black pepper to taste
  • Optional: 1/2 tsp red pepper flakes
  • Optional: 1 small onion or 2 shallots, finely diced

Instructions

  • Preheat oven to 400°F (200°C).
  • Spread cherry tomatoes and garlic on a baking sheet. Drizzle with 1/4 cup olive oil, season with salt and pepper.
  • Roast for 25-35 minutes, until tomatoes burst and garlic is golden.
  • (Optional: Sauté diced onion/shallots in a large skillet with a tablespoon of olive oil over medium heat until translucent.)
  • Transfer roasted tomatoes, garlic, and juices to the skillet.
  • Gently crush some tomatoes with a spoon. Add red pepper flakes if desired.
  • Simmer for 10-15 minutes, allowing flavors to meld.
  • Blend to desired consistency using an immersion blender or by mashing.
  • Stir in fresh basil. Taste and adjust seasoning with salt, pepper, or a pinch of sugar.
  • Serve hot over spaghetti or your favorite pasta.
