Ingredients
- 1 pint (about 2 cups) cherry or grape tomatoes, halved
- 2–3 cloves garlic, minced
- 1/2 small yellow onion, finely diced
- 3 tablespoons extra virgin olive oil
- 1/4 cup fresh basil leaves, torn or roughly chopped
- 1/2 teaspoon red pepper flakes (optional, for heat)
- Salt and freshly ground black pepper to taste
- Optional: Parmesan cheese for serving
Instructions
- Prepare Ingredients: Wash and halve tomatoes, mince garlic, and dice onion.
- Sauté Aromatics: Heat olive oil in a large skillet over medium. Add garlic, onion, and red pepper flakes (if using). Sauté 3-5 minutes until softened and fragrant.
- Add Tomatoes & Cook Until Burst: Add halved tomatoes to the skillet. Increase heat to medium-high and cook 8-12 minutes, stirring occasionally, until tomatoes soften and burst. Gently mash some with a spoon.
- Simmer & Reduce: Reduce heat to low and simmer for 5-10 minutes to meld flavors and thicken sauce.
- Stir in Basil & Season: Remove from heat, stir in fresh basil. Season generously with salt and pepper.
- Adjust to Perfection: Taste and adjust seasonings. Serve immediately with your favorite pasta.
