Ingredients
- 1.5 lbs (approx. 680g) cherry or grape tomatoes
- 3–4 cloves garlic, minced
- 3 tablespoons extra virgin olive oil
- 1/4 cup fresh basil, chopped or chiffonade
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon freshly ground black pepper (or to taste)
- Pinch of sugar (optional, for balancing acidity)
- 12 oz (approx. 340g) spaghetti or your favorite pasta
- 1/2 cup reserved pasta water (optional)
Instructions
- In a large skillet, heat olive oil over medium-low heat. Add minced garlic and sauté until fragrant (1-2 minutes).
- Add cherry tomatoes to the pan. Increase heat to medium and cook for 8-10 minutes, stirring, until tomatoes burst. Gently mash some with a spoon.
- Reduce heat to low, add salt, pepper, and sugar (if using). Simmer for 10-15 minutes, uncovered, allowing the sauce to thicken slightly.
- Cook pasta according to package directions until al dente. Reserve 1/2 cup pasta water, then drain.
- Remove sauce from heat, stir in fresh basil. Taste and adjust seasonings.
- Add drained pasta to the sauce, tossing to coat. Add a splash of reserved pasta water if needed for a silkier sauce. Serve immediately.
