Ingredients
- 1.5 lbs (about 4 cups) cherry tomatoes
- 8 cloves garlic, 4 crushed and 4 thinly sliced
- 1/4 cup extra virgin olive oil, plus more for garnish
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup fresh basil leaves, torn or chopped
- Salt and freshly ground black pepper to taste
- 1 lb spaghetti or linguine
- Freshly grated Parmesan cheese, for serving
Instructions
- Preheat oven to 400°F (200°C). Arrange cherry tomatoes and garlic on a large baking sheet. Drizzle with olive oil, salt, and pepper.
- Roast for 25-35 minutes, or until tomatoes are blistered and softened.
- Transfer roasted tomatoes, garlic, and pan juices to a large skillet. Smash tomatoes gently with a spoon or masher. Stir in red pepper flakes (if using).
- Simmer for 5-7 minutes, allowing flavors to meld and sauce to thicken.
- Remove from heat, stir in fresh basil. Taste and adjust seasoning.
- Cook pasta according to package directions, reserving 1 cup of pasta water.
- Add cooked pasta to the skillet with the sauce. Toss to combine, adding a splash of pasta water if needed for consistency.
- Serve immediately with fresh Parmesan cheese.
