Winter is a time for game, and hearty warming dishes: rich and filling. Soups, stews and roasts cook slowly and develop intricate flavors that becon us in from the cold. It is also a time to enjoy all of the wonderful root vegetable and to relish those greens and herbs that are still available to us fresh even though Old Man Winter has nature in his grip. During winter it is important for our health and spirit to look back at the summer and remember the warm weather bounty by raiding the larder for canned pears, peaches, tomatoes and beans. . .and enjoy the sunshine wherever it comes from. Winter is a time to be creative. Blood oranges and other splendid citrus fruits are available and the last of the summers Swiss Chard stands beckoning in the garden. By the end of February hints of Spring are tempting us towards and early Easter.
