Even before Winter is over we have dreams of Springtime. If we are lucky, we have planted things in the Autumn which are now poking their heads up through the last of the Winter’s snows, taunting us to come out of our own culinary cocoon and begin cooking with fresh ingredients once again. That is not to say we haven’t borrowed across the seasons occasionally at the supermarket–who can’t resist fresh peas or zucchini in the depths of winter at least once and a while. . . But now, we look towards what we can plant and what is emerging right now. Out in the fields the spring lambs are bouncing around and the bees are journeying afield, letting us know that the world is alive again and ready for our plate.
